This is a super fast supper that's perfect for summer.

I used rainbow chard because it looks and tastes lovely but you could use rocket, kale or another strong-tasting, slightly bitter green.

I make the caramel with dates (not super-pricey Medjool dates) rather than cream or condensed milk because it's easier.

These are grown up cookies. Coconut can be a bit overpowering and tropical but with white chocolate it's pretty tame.
I don't usually like coconut in baking or cakes but these biscuits are surprisingly yummy.

If you want them very colourful you need to add even more hundreds and thousands to the dough. They would be great for kids to make and this recipe is pretty plain for fussy eaters.
These cookies are a little chewy too, rather than snappy like biscuits.

Five ingredient jammy dodgers biscuits cookies


Ok the photos aren't my best but who cares. These are yummy and really easy to make.
The only extra thing you need is a smaller cookie cutter to make the, er, jam hole.
I used some star cutters I had in different sizes.

Sage with butter and pasta is a bit of a classic but I think it can be too rich and I always feel a bit guilty slugging a huge wedge of butter into the pan.

Adding steamed butternut squash, or pumpkin, makes this a bit healthier and it helps that sage tastes amazing with squash - a bit like stuffing.

The lemon juice makes this dish feel a bit fresher for spring and stops it feeling to rich. 

And this butter butternut and sage linguine only takes fifteen minutes to make, winner!
