Ok the photos aren't my best but who cares. These are yummy and really easy to make.
The only extra thing you need is a smaller cookie cutter to make the, er, jam hole.
I used some star cutters I had in different sizes.
INGREDIENTS
• 200g unsalted butter
• 190g golden caster sugar
• 1 large egg
• 400g plain flour
• about 8 tablespoons of strawberry jam

RECIPE
1. Turn the oven to 200C/390f. Line a baking sheet with baking paper.
2. Beat the butter and sugar until creamy.
3. Add the egg and mix in until combined.
4. Add the flour and bring the mixture together to form a dough.
5. Break off part of the dough and roll it out on a floured surface to atound the thickness of a coin. You want it quite thin so the biscuit isn't too thick when two are sandwiched together with jam in the middle.
6. For every biscuit you need a top biscuit with a hole in the middle so you can see the jam.
7. Bake for 8 to 10 minues until gooden brown.
8. Leave to cool on a rack and when the biscuits are still a bit warm, drop about half a teaspoonful of jam on one and pop a biscuit with a hole in the middle on top.
9. Dust with icing sugar if you like!
