These are grown up cookies. Coconut can be a bit overpowering and tropical but with white chocolate it's pretty tame.
I don't usually like coconut in baking or cakes but these biscuits are surprisingly yummy.
INGREDIENTS
• 200g self-raising flour
• 100g caster sugar
• 110g unsalted butter, softened
• 85g dessicated coconut
• 100g white chocolate chips
• 100g caster sugar

RECIPE
1. Set oven to 190C/370F. Line a baking sheet with baking paper (greaseproof paper).
2. Put the flour, sugar and butter in a bowl and rub the butter into the dry ingredients with fingertips until it looks like breadcrumbs.
3. Add the coconut and chocolate chips.
4. Bring the mixture together to form a stiff dough.
5. If the dough is not coming together easily, add a splash of milk or a little bit of lightly beaten egg.
6. On a lightly floured surface, roll the dough out to about the thickness of a pound coin. The cookies will puff up a little bit when they bake.
7. Use cookie cutters to cut the shapes and place on baking tray.
8. Bake for 10 to 15 minutes until golden.
